Making Scrabled Eggs For Breakfast

If you don't know how to make scrabled eggs then now is a great time to learn.  This is a meal your toddler can enjoy and even feed himself.  You can whip up this recipe in no time so it's great when you're in a hurry to get out the door too!

Scrabbled Eggs For Toddlers

Ingredients:

6 eggs
1/3 cup milk
1 teaspoon chopped chives
salt and pepper
1 package cream cheese (3 ounces)
2 tablespoons unsalted butter

Directions:

Crack eggs into a large mixing bowl.  Add milk, chives and a little salt and pepper.  Beat all ingredients with a fork until mixed well.  Cut cream cheese into small chuncks and add to the egg mixture.  Stir with a wooden spoon to combine, mixture will look lumpy.  Melt butter on a pan and pour egg mixture in.  Cook over low heat until eggs start to thicken and set.  Stir gently the allow the uncooked egg to move to the bottom of the pan but don't over stir.  Continue until eggs is good through but not too dry, about 5-8 minutes.
