Sweet Potato Custard Recipe for Baby

This sweet potato custard is a nice change for baby from regular mashed sweet potatoes. It bakes up quickly and is suitable for any baby 10 months or older. This is so yummy, the rest of the family will enjoy it for dessert as well.

1 cup mashed cooked sweet potato
1/2 cup mashed banana
1 cup evaporated skim milk
2 Tbs packed brown sugar
2 beaten egg yolks
1/2 tsp salt
Nonstick cooking spray, as needed
1 Tbsp sugar
1 tsp ground cinnamon

Get out a bowl and add the sweet potato and banana to it. Make sure both are well mashed. Add the milk and stir until combined. Add the brown sugar, egg yolks and the salt and mix well.

Add the mixture to a 1 quart casserole dish that has been sprayed with the cooking spray.

Combine the sugar and cinnamon in a small cup or bowl and sprinkle it over top of sweet potato mixture.

Bake at 325 for 45 minutes. Your custard is done when a knife or toothpick inserted in the middle comes out clean.
